several states have began to ban the practice, California and Arizona, because there is good evidence that the Citrus Red #2 dye they use to turn green peels to orange is carcinogenic. A green citrus fruit is normal if they never got a cold day. The peel is inedible when dyed.
if you are nervous about if your orange is dyed, rub it with a white cloth or paper towel and if it comes back like radioactive red or pink, then they dyed the peel. you cannot use that peel for zest or candying.
